With over 20 years experience in pastry, bread and chocolate, and as the captain of the 2005 Bread Bakers Guild Team USA, where he led his team to victory at the Coupe du Monde de Boulangerie (World Cup of Baking), William is quickly making Bakery Nouveau a Seattle icon.





Macrina Bakery and Cafe



In the search for a name for this new bakery, I wanted something not connected to any country or culture, yet reflecting my philosophy.
First liking the sound of the name Macrina, the 4th century Greek mystic and visionary, I later discovered through research, that Macrina started one of the first communities that held property in common and emphasized a simple, self-sufficient life. Caring as much as I do about the connection between bread and the communion of sharing that happens at meals, there is a natural bond with the philosophy of Macrinas community.
Much has been written about the mystique of bread and how a simple and elementary food has such magnetism the soul and passion of the baker transcends into the loaf that is shared with the community.
Based on the model of the traditional old-world village bakery; the bread has unique characteristics because of the use of available regional ingredients. The rustic European breads and baked goods from Macrina use as many indigenous products as possible as well as organic grains and natural ingredients.
The philosophy of the bakery is to enhance both the natural products and the flavor of the various grains. The baked goods are created from Northwest apples, potatoes, cranberries and hazelnuts, as well as wheat, rye, barley and buckwheat flour. Macrina Casera, the house bread, was developed to be eaten at any meal, complementing all foods.
The bakers at Macrina love bread and that shows in the quality. This is bread that celebrates the tradition of breaking bread with family and friends.

A La Mode Pies


A la Mode Pies is a bakery that creates exceptional pie - delivered to your doorstep or in our new retail shop! (7am-7pm daily) Every A la Mode Pie is prepared fresh using primarily locally-grown, organic fruit. Seasonal menu includes: White Chocolate Banana Cream, Blue Hawaiian, Chocolate Cream w/Pretzel Crust, French Apple, Star-Spangled Sour Cherry, Marionberry & Hazelnut, Key Lime, Lemon Macaroon Tart, Chocolate-Caramel Tart, Rhubarb Tart w/Brown Butter and the LolliPie - a silver-dollar sized, lollipop-inspired pie in three delicious flavors: Apple Cinnamon, Cherries Jubilee and Blue Hawaiian.


Le Rêve (French for the dream) represents the vision that co-owners Andrea Nakata and Sharon Fillingim haven creating a neighborhood gathering spot where they can serve the community through their creations and support of charitable organizations.

TM Dessert Works has been serving the Phinney Ridge neighborhood since 1990. We are glad to be a part of the local community and able to supply desserts for everyone’s special occasions.

Our techniques are simple. We focus on quality. We find the best ingredients from the best sources and put them together to make the best products. We use the finest of chocolates in our fillings and for the finishing touches on our products. Street Treats is a mobile dessert truck selling homemade treats in a different Seattle neighborhood six days a week and weekend evenings.
